11/20/13 - Butternut Squash Pizza

We often order the butternut squash and bacon pizza at Alder Wood Bistro in Sequim. This time we tried to make our own version, so we roasted up some butternut squash, pan fried some bacon, sauteed some mustard greens, soaked some dried porcini and grated some parmesan. Thats a bit of work for a topping, but that's what Kaleberg Kitchens is all about. It also isn't quite the Alder Wood recipe. The mustard greens were our own idea, and we use the Chez Panisse pizza recipe in a regular oven, not a wood fired one. Still, it was a really good pizza, especially the sauteed mustard greens.

02/24/12 - Brussels Sprouts Pizza

Alder Wood Bistro is back up and running, and Gabriel is creating some amazing food. For example, consider this brussels sprouts pizza. It might sound a bit strange, but Clallam County is a major producer of brussels sprouts and brussels sprouts seeds, so these are one of our amazingly good local variants. Then, they've been caramelized, cooked until they are browned and tender along with some bacon, onions and little mushrooms. It's a wonderful dish. We liked it so much, we ate one large pizza at the restaurant and took one with us to go.

Brussels sprouts: Wood fired pizza will never be the same.

12/18/10 - Alder Wood Bistro Brew 'n Burger

We just tried the Clark Family Farm beef burger at the Alder Wood Bistro and we were really impressed. We've been enjoying a lot of Clark Family Farm beef, but this was our first burger, and it was prepared by a master. It is our favorite burger now, hands down. We also tried Alder Wood's new extra dark, smoked hopped brew. It was extremely rich, and with the smokey notes it reminded us of drinking scotch. It was an overwhelming drink, so we didn't have very much. We really wanted to be able to finish our wonderful burgers.

03/27/09 - Gabriel's Rabbit Pates

We were recently asked to do some beta testing by the chef at the Alder Wood Bistro. Gabriel, having recently returned from Spain, had been experimenting with cooking rabbit and making pates. He had made two versions, one a rough country pate, the other more traditional. We gave them both a try. The country pate, with its heartier flavor and coarser texture was our favorite, but we had nothing against the smoother and slightly more delicate version. Which one will be showing up on the menu? We can't say. They're still both in beta.
