Favorite - This is an all time favorite
The Parker House hotel has been in Boston for a million years. How did this dish from an abolitionist hotbed wind up a Southern staple? We have no idea. Maybe the Southerners just like great bread, and these rolls are spectacular.
Parker House Rolls

1 packet yeast
1/4 cup lukewarm water
1 tbsp + 1 tsp sugar
2 tbsp butter
2 tbsp lard
1 tsp salt
2 cups milk
4 cups flour
1) Dissolve yeast in 1/4 cup water w/1 tsp sugar.
2) Add scalded milk to1 tbsp sugar, butter, lard & salt. Stir to dissolve.
3) When milk mix is lukewarm, add flour, then yeast. Knead to form a dough.
4) Let rise to double.
5) Push down & roll out to 1/2 inch thick. Cut into biscuit rounds. Butter each circle and fold in half and put side by side on a baking pan.
6) Preheat oven to 425.
7) Let rolls rise to double.
8) Put rolls in oven. Turn down to 375 and bake for 20 minutes.
Yield: 18 - 24 rolls
