Recipe for Ostrich Medallions


Ostrich Daube

Favorite - This is an all time favorite

Sigh. We miss the local ostrich farm. Ostrich is a dark meat with a rich, beefy flavor. It is surprisingly tender. We like ostrich fajitas, but we also love this dish, with lots of lemon zest and rosemary.

Ostrich Medallions


- 6-8 ostrich filets
- olive oil
- 1-2 tsp dried rosemary
- 1-2 cloves garlic
- 1-2 tbsp parsley(and/or chervil)
- lemon zest - whole lemon's worth
- red cooking wine
- beef or chicken stock (or gelee)

Rub the ostrich filets w/olive oil, rosemary, garlic, parsley & lemon zest. Let rest an hour.
Saute on high heat, 3-4 minutes a side. Meanwhile, boil wine & stock.
When ostrich is done, deglaze w/wine & stock. Season with salt & pepper.
