Recipe for Caldo Verde

Cabbage Stroganoff

Great - We really like this one

This is a Portuguese classic. You can add clams if you want.

Caldo Verde

from Boston Globe 2/17/99

6 medium-large potatoes, cut into chunks
1 lb linguica and/or chorizo
4 garlic cloves, chopped
1/2 tsp salt
1 tbsp olive oil
5 - 8 cups washed kale, cut into 1/2 inch strips

1) Cook sausages partially, drain fat
2) Put sausages, potatoes, garlic & salt in a pot w/8 cups water. Boil until potatoes are tender.
3) Fish out sausages and 1/2 of the potatoes. Cut up sausages, return to pot. Mash potatoes, return to pot.
4) Add olive oil & kale. Cook for 10 minutes.
5) Season w/salt & pepper.
