Recipe for Cabbage Stroganoff

Good - This is definitely good eating

This is just not as good as beef stroganoff, but it has a lot of the same flavors. Watch out. For a cabbage dish, this one is pretty rich.

Cabbage Stroganoff

1 head cabbage, 1/4" slices
2 large onions, 1/4" slices
1lb crimini mushrooms, 1/4" slices
2 tbsp butter
2 tsp coriander seed, crushed
1 tsp black pepper, crushed
2 tbsp worcester sauce
2-4 tbsp tomato paste
juice of a lemon

Alternate: use dried porcini or equivalent quantity of other kinds of mushrooms

Cook cabbage in 1 tbsp butter over moderately high heat so it caramelizes slightly.
In a separate pan, cook onions in 1/2 tbsp butter until soft, add to cabbage.
in a separate pan, cook mushrooms in 1/2 tbsp butter until they stop giving off water, add to cabbage.
Mix vegetables together, add coriander seed, pepper, some salt, tomato paste, worcester sauce & lemon juice to taste.
