Recipe for Biscuits

Bellyache Soup

Great - We really like this one

This is a Southern classic.


from Edna Lewis

3 cups flour
1 scant tsp salt
1/2 tsp baking soda
4 tsp baking powder
2/3 cup lard
1 cup + 2 tbsp buttermilk

- sift together dry ingredients, mix in lard to cornmeal texture w/fingers
- add milk in one dump and stir vigorously w/wooden spoon, it will stiffen in 2 - 3 minutej
- flatten dough on floured surface, knead by gently folding in edhes
- roll to 1/2 inch thickness, pierce w/fork, cut out biscuits (dust cutter w/flour)
- put biscuits 1/2 inch apart on cookie sheet
- bake at 450 for 13 minutes, let cool 3 - 4 minutes
