Recipe for Zuccini and Olive Mashed Potatoes


Good - This is definitely good eating

We tried this once. It isn't bad, but it is barely worth bothering with the zucchini. Sorry.

Zuccini and Olive Mashed Potatoes

2.5 lbs boiling potatoes
1 ounce dried tomatoes (1/2 cup)
2 lbs zucchini (4 medium)
10 kalamata or other brine cured black olives
4 garlic cloves
2 tsp olive oil

Peel and quarter potatoes. Cook covered with 2 inches of water for 25 minutes. Add tomatoes and simmer 5 minutes. Drain. Mash the potatoes, cut the tomatoes into julienne strips.

Grate the zucchini using the coarsest face of a four sided grater. Pit olives and cut into julienne strips. Mince garlic. In a large skillet, heat oil until hot, sauté garlic until golden. Add tomatoes, zucchini, olives, salt and pepper to taste. Cook until zucchini is tender, about 3 minutes.

Stir mixture into potatoes and adjust seasoning.
