Turnip Comfort
- 1/4 cup lightly smoked thick country bacon in 1/2 inch dice
- 2 cups onion in 1/2 inch dice
- 2 cups peeled potatoes in 1/2 inch dice
- 2 cups peeled turnips in 1/2 inch dice
-1 bay leaf
- cup torn collard leaves
- 1/4 cup heavy cream
1) Lightly cook bacon, brown edges, about 4 minutes. Pour off extra fat.
2) Saute onion until translucent (4 min), add potato & turnip. Saute 2 minutes. Add bay leaf & cover w/water. Boil, then simmer 15 - 20 minutes.
3) Add collards. Simmer until tenner (3 min). Add cream, salt & pepper. Remove bay leaf.
