Great - We really like this one
This is the ling cod version of our fish muddle. It's better if you add some shrimp.
Fish Muddle Variant
1/4 lb smoky bacon
3 stalks celery, peeled and chopped
4 onions, sliced
6 cloves garlic, minced
2 red peppers, sliced
3 potatoes diced
2 - 3 sprigs of fresh marjoram and/or thyme
1 can tomatoes
2 little bits of dried orange peel
2 lbs ling cod, cut into big chunks
- Saute the bacon, then add the vegetables and herbs, and cook until nice and soft (except for the potatoes). If necessary, add some olive oil.
- Add the can of tomatoes and orange peel and bring to a boil, then lower to a simmer.
- Add the ling cod chunks and cook until the potatoes are soft and the fish cooked through.
