Rocky McLanahan's dad made this dish at one of Andrew May's parties, and we got the recipe from him.
Copper River Salmon
Copper River Salmon
- 4lbs copper river salmon
- aluminum foil
- kettle or smoking type charcoal grill
- 1 - 2 tbsp honey
- 8 cloves crushed garlic
- 1 - 2 tsp dried mustard
- 1 - 2 tsp worcester sauce
- juice of 1 lemon
Mix up the latter five ingredients and adjust to taste. It needs to be tangy.
Put the salmon skin down on a sheet of aluminum foil. Make a double layered aluminum foil tray for the salmon with extra foil so it can be folded over and sealed or open.
Start up the grill. When the fire is hot, spread out the coals around the edges, leaving the middle free so you don't burn the fish. Put the fish, in its foil tray, on the middle of the grill and then close the kettle and let it cook and smoke for at least 30 minutes. You can cook it longer and get it smokier.
