Holiday - This is a holiday favorite
We usually serve these around Christmas. We've used country ham, bacon, smoked goose, smoked turkey and even our own cured ham. Anything salty and meaty works.
It really is better to boil, rather than microwaving or baking the potatoes.
Yam Biscuits with Smoked Goose (or Country Ham)
and Chutney Butter
(Gourmet Oct 1984)
For the biscuits
2 cups flour
1 tablespoon double acting baking powder
1 teaspoon salt
2 tablespoons sugar
1/2 cup vegetable shortening or butter
2 cups mashed cooked yams or sweet potatoes
2 tablespoons heavy cream
For the chutney butter
1 stick unsalted butter
4 scallions minced
1/4 cup mango chutney
2 tablespoons Dijon mustard

Biscuits Ñ In food processor combine flour, baking powder, salt, sugar. Then add shortening and yams to form soft dough. Pat dough 1/2 inch thick on floured surface, cut out or fake rounds. Just make a rectangle, cut into squares and squeeze the squares into circles. Put rounds on buttered baking sheets, brush with cream. Bake at 400 degrees for 18-20 minutes; cool.
Chutney butter Ñ Cream butter, scallions, chutney and mustard.
Split biscuits, spread butter, close over meat filling. Can be made 24 hours in advance. Wrap in foil, reheat 18-20 minutes at 350 degrees. Wrap newspaper around foil to keep warm.
