Recipe for Pumpkin Pie


Pound Cake

Holiday - This is a holiday favorite

Use a sugar pumpkin, or a blue hubbard squash. Make sure you cook down the custard.

Pumpkin Pie


- open shell pie crust
- 15 oz can of solid pack pumpkin (2 cups)
- 1 cup evaporated milk
- 1/2 cup heavy cream
- 2 large eggs
- 3/4 - 1 cup light brown sugar
- 1/2 tsp cinnamon
- 2 tsp quatre epice - 1 tsp cinnamon, 2 tsp allspice, 1/8-1/4 tsp cloves, 1/2 tsp cardoman, 1 tsp nutmeg, 2 tsp coriander
- 1/4 tsp salt

Make up and bake an open shell pie crust at 375 for 20 - 25 minutes.
Mix up filling and pour into shell.
Bake at 375 for 45 - 55 minutes until filling is set but center still trembles.
