We always have a batch of this around for buffalo burgers or for making shrimp cocktail sauce.

(from the Joy of Cooking)

4 quarts tomatoes, cut into pieces
1 long red pepper cleaned and cut up
4 medium sized sliced onions

4 - 6 tbsp light brown sugar

1 1/2 tsp whole allspice
1 1/2 tsp whole cloves
1 1/2 tsp whole mace
1 1/2 tsp celery seeds
1 1/2 tsp black pepper corns
short stick of cinnamon
1/2 tsp dry mustard
1 clove of garlic
1 bay leaf

small cloth bag for the above spices

1 cup cider vinegar

1) Simmer the tomatoes. Add the red pepper and onions. Simmer until soft. Run through a food mill or food processor.

2) Add the sugar.

3) Put the allspice, cloves, mace, celery seed, pepper corns, cinnamon, mustard, garlic & bay leaves in a small cloth bag and add it to the mix. Boil quickly, stirring often until the quantity is reduced by about half.

4) Remove the spice bag. Add the vinegar. Adjust to taste with salt and cayenne. Simmer for ten minutes.

This will keep for weeks in the refrigerator. It may also be canned at this point.
