Holiday - This is a holiday favorite
We make these now and then for Christmas. It brings back the New
York City memories.
Half and Half Cookies
Half and Half Cookies
from Gourmet 12/05
- 7 tbsp butter
- 1/2 cup granulated sugar
- 1 large egg
- 1/3 cup buttermilk
- 1/2 tsp vanilla
- 1 3/4 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
Cream the butter, cream in the sugar, add the egg and mix until fluffy.
Add the buttermilk and vanilla and partially mix.
Add the flour, soda and salt and finish mixing.
Grease a baking sheet, preheat oven to 350.
Make teaspoon sized cookies, one inch apart. Full teaspoons make 3"
cookies. Perhaps baby spoons would make mini-cookies.
Bake for 6 to 8 minutes, until the cookies are springy and lightly
browned.
Let the cookies cool, then turn them over. The flat side gets iced.
- 2 3/4 cups 10X confectioner's powdered sugar
- 2 tbsp light corn syrup
---- or reduce use sugar syrup made by mixing 1/2 cup sugar & water
and cooking it down
- 1/2 tsp vanilla
- 2 tsp lemon juice (1/4 lemon is about right)
- 4-6 tbsp water
- 1/4 cup cocoa powder
Mix sugar, lemon juice, vanilla and syrup. Add water to make a paste.
Take about half of that mixture and add the cocoa powder and a bit more
water.
Consider making raspberry icing using jam!
Use a rubber spatula to spread the icing. It works rather well.
