Recipe for Caramel Layer Cake

Favorite - This is an all time favorite

This is a spectacular cake. We use the cake batter to make excellent cupcakes for our Hawaiian luau.

The icing on this cake can be a bit tricky. Make sure the syrup is hot enough, a true softball, and then WORK QUICKLY.

Caramel Layer Cake

5 tbsp butter
1 cup sugar
1/4 tsp salt
2 eggs
2 cups sifted flour
4 tsp baking powder
2/3 cup milk
2 tsp vanilla extract
1 tsp+ lemon juice

- work butter soft & shiny, work in sugar and salt
- add eggs and stir to dissolve sugar
- alternate adding flour, bakinq powder mix with adding milk starting ending w/flour
- add vanilla & lemon juice
- pour into two 9 inch buttered, floured cake pans
- bake 25 minutes in 375 degree oven

Icing

1 cup heavy cream
2 1/4 packed cups light brown sugar
2 tbsp butter
2 tsp vanilla

- heat cream, add sugar and mix well
- boil gently until softball stage
- set saucepan in cold water, add butter & vanilla
- stir as it cools until thick enough to spread
- ice the cake
