We first had this dish in Italy and we love it. It is great comfort food. The trick is to use good chicken stock.

Bowtie Pasta w/Chickpeas, Carrots & Onions

Bowtie Pasta w/Chickpeas, Carrots & Onions

2-4 carrots
1-2 onions
2 cans chick peas (or one big can)
2 qts turkey (or chicken) stock
dried thyme
1-2 tsp lemon zest
12 oz or 1lb bowtie or similar chewy pasta
olive oil
salt & pepper

Dice thecarrots and onion(s).
Saute in olive oil.
Cut up the chick peas, cutting each pea into at least two pieces.
When the carrots start to soften and the onions start to get transparent, add the chick peas and stir.
Add the chick peas and stir.
Add the turkey stock and bring to a boil.
Add the lemon zest, thyme and pepper.
Cook until the pasta is done.
