Great - We really like this one
You have to use green plantains and good chicken stock. It really works!
Bellyache Soup
- Miami Spice
2 tbsp olive oil
1 carrot finely chopped
2 ribs celery finely chopped
1 small onion finely chopped
2 cloves garlic minced
5 cups chicken stock
2 green plaintains peeled + diced
1 bay leaf
1 tsp cumin powder
1/2 cup finely chopped cilantro
salt + pepper
- saute garlic, onion, carrot, celery in oil for 3-4 min
- add stock, bring to boil, add plaintains. bay leaf, cumin, 1/2 cilantro, salt & pepper, cook uncovered 40-50 min
- discard bay leaf, puree 1/2 soup in blender, return to pot
