There is nothing like the flavors of chervil, garlic and butter to bring out the flavor of shrimp and peas. This dish is best with peas from the pod.
Ingredients
1 1/2 to 2 lbs freshly peeled shrimp
1/2 lb peas in shells, about 1/2 cup shelled
1/4 - 1/2 cup chervil chopped (big fistful)
2 cloves garlic
1/2 tbsp butter
1 tbsp olive oil
salt
Instructions
Heat the butter and olive oil in a frying pan. Cook the peas slowly over low to moderate heat, about five minutes, until they turn bright green.
Add the shrimp, garlic, chervil and a bit of salt. Cook over moderate to high moderate heat, tossing with a tablespoon and fork, until the shrimp are opaque and cooked through, about five minutes.
